Responsibilities

  • Set and maintain process standards regarding dough temperature, hydration, dough handling and fermentation.

  • Maintain manufacturing and process specification records for all SKU's and implement potential changes based on the artisan bread principles.

  • Review SAP standards for weight and weight loss vs. actual processing parameters and ensure compliance.

  • Work with FSQA team on evaluating Finished Good Oven-Visual Aid Guides and determine corrective action for off- target product.

  • Develop location training manual for bakery operators.

  • Demonstrate a passion for food and innovation.

  • Consult and ensure process compliance with projects including product development, process improvements, special projects and technical innovation improvements.

  • Identify and resolves problems in a timely manner, gather and analyze information skillfully, develop alternative solutions.

  • Pursue training and development opportunities; strive to continuously build knowledge and skills; share expertise with others.

  • Assists other members of the team in creating samples from formulas handed down.

  • Responsible for sample inventory control and proper storage

  • Responsible for ingredient/packaging inventory and storage

  • Responsible for sample shipments and maintenance of shipping and receiving records for the lab.

  • Supports team members on line trials when necessary.

  • Adhere to NPD/BRC guidelines and Good Manufacturing Practices

The essential functions of this role include:
