Kitchen Lead

Reports to: Kitchen Manager Supervisory Responsibility: Yes

Job Summary

A senior member of the kitchen team working closely with, and reporting to, the Kitchen Manager to produce quality food to menu specifications promptly. This position will have full responsibility for all aspects of the kitchen when the Kitchen Manager is absent, except hiring and firing. Using creativity, enthusiasm and pride to maintain high quality and safety standards. Working with the Front of House Management and Team Leaders to deliver projects that develop food production, management, and guest service experiences.

Essential Functions

Primary responsibilities include assisting the Kitchen Manager in:

  • Working with the kitchen team to produce quality menu items on a daily basis
  • Manage the daily paperwork with regard toordering, receiving, and equipment maintenance
  • Assisting the Kitchen Manager with ordering and menu planning
  • Ensuring the temperature records and monitoring is done continuously
  • Ensuring kitchen, and kitchen effected, areas are cleaned as per the cleaning schedule
  • Ensuring the kitchen inventory and other potential areas of loss are secured at all timesaccording tothe instructions of management
  • Assist with scheduling/delegating duties to staff in accordance with supervisory guidance
  • Covering all duties normally assigned to the Kitchen Manager in their absence (except hiring and firing)
  • Carrying out any reasonable requests made by the Kitchen Manager
  • Assisting in kitchens at multiple locations (as needed)

Additional Functions

  • Delegate and assist (when possible) line and prep cooks' tasks of washing, cutting, portioning, and stocking stations with proper ingredients and supplies
  • Monitors and assists (when necessary) dish washing station for performance and cleanliness
  • Adjust to high pressure situations, encourage others to do the same, and remain open to change.
  • Conducts themselves professionally at all times with respect for all team members and guests
  • Full understanding and knowledge of food safety laws
  • Takes responsibility for the adherence and compliance of all food hygienelegislation
  • To report and, where possible, to attend to and take all necessary action, statutory and otherwise,in the event of accident, fire, loss, theft, lost property, damage, unfit food or other irregularities and complete the necessary documentation
  • Other duties as assigned by Kitchen Manager

Required Skills

  • Minimum of 6 months experience in a high-volume kitchen environment
  • Knowledge and skill of ordering, inventory management, equipment maintenance needs and employee scheduling
  • Multitasking, reliability, and attention to detail
  • Communication skills (verbally interacts with supervisors and all team members.)
  • Operate kitchen equipment
  • Ability to accept constructive criticism and work calmly and effectively under pressure.
  • Problem-solving skillsand works cooperatively with others

Requirements

  • State-approved food manager certification

Physical Requirements

  • Work in a standing position for extended periods of time.
  • Reach, bend, stoop and frequently lift up to 35 pounds and occasionally lift/move 50pounds.
  • Work in an environment where you will be exposed to heat, cold, steam, etc.
  • Manual dexterity
