Grand Central Bakery Assistant Bread Operations Manager in Portland, Oregon

Grand Central Bakery is seeking an Assistant Bread Operations Manager for our high-volume production bakery where we produce thousands of our flavor-packed rustic breads and savory pastries for our customers! 

Applicants for the Assistant Bread Ops Manager position should have a passion for baking artisan bread in a high-volume production environment for our community. The Assistant Bread Ops Manager thrives in a fast-paced environment with a team first approach and experience in both management and production environments. This is a physical position that will keep you moving during the entirety of a shift.

The Assistant Bread Operations Manager is directly responsible for supporting and maintaining all bakery operations, including supporting and managing all shift managers, staffing, training, quality control, baker job performance, communication, inventory management, facilities and maintaining employee morale within the parameters of Grand Central’s mission and financial goals. Developing and mentoring skilled, passionate shift managers and bakers who understand and uphold Grand Central Bakery’s quality specifications is a core responsibility.

(This department is represented by BCTGM local 114 and subject to terms of the collective bargaining agreement between Grand Central Bakery and BCTGM local 114. Priority will be given to internal candidates who apply in the first 7 days of the job posting.)

Location: Portland Wholesale, 2249 NW York St., Portland, OR 97210

Rate of Pay: This position pays $71,000 annually. 

Schedule: Full-time Salaried Position. Must have schedule flexibility and the ability to work weekends and holidays is required to support business needs.

Qualifications and Skills:

  • Must be at least 18 years old

  • Ability to read, write, and speak English required; English/Spanish bilingual preferred.

  • Maintains a valid Food Handler's Card at all times and follows health department regulations at all times.

  • Knowledge of all health department regulations concerning food production and handling required. 

  • Must be able to add, subtract and multiply with ease and accuracy.

  • Intermediate computer skills including use of Microsoft Outlook, Excel, Word or comparable programs required. ERP experience preferred.

  • 5 or more years of production bread baking experience required

  • 2 or more years’ experience in management or leadership required.

  • Knowledge of health department regulations for food production required.

  • HACCP experience required.

  • Experience with high-volume bread equipment, and the ability to innovate

  • Experience with and commitm ent to farm direct purchasing, cost control, and maintaining vendor relationships

Physical requirements include but are not limited to:

  • May be required to stand for 100% of their shift.

  • Walking up to the equivalent of two miles per shift and may require carrying up to 30 lbs.

  • Working in warm environments. The production facility is constantly exposed to wheat flour dust and other grain dusts (rye, corn, oat).
