JOB REQUIREMENTS: Work Process Description 1. Kitchen Systems A. Warewashing of all dishes in operations, including pots and pans B. HACCP Principles; stocking, rotation practices (FIFO), recording of temperatures C. Keeping kitchen sanitary; completion of scheduled cleaning tasks D. Assemble and complete tray delivery process to hospital patients E. Review Diet office/Call Center procedures for processing/entry of orders 200 2. Garde Manger/Cold Prep/Meat Station A. Routine Garde Manger (cold prep) work including ingredient preparations for all stations B. Butchering and/or preparation of cold meats for service, carving and handling of meat, fish, poultry C. Mis en place preparations for all stations, making and assembling garnishes D. Preparation of salads, sandwiches, desserts etc using standardized recipes E. Demonstrate knife skills, gain equipment proficiency, use of weighted and metric measures 3. Vegetables A. Cooling of vegetables, using varying methods B. Proper storage of fruits and vegetables C. Vegetable preparations using varying styles and equipment 4. Sautee & Short Order Cookery A. Frying and sauting of meats, eggs, vegetables, poultry and such other foods as customarily fried and sauted B. Ability to function in short order style cooking; preparing, assembly and completion of orders in short order environment for immediate service 5. Primary Food Production A. Roasting, baking, broiling of all meats, fish and poultry B. Production and garnishing of all Center of Plate (COP) items; Including casseroles, pastas, etc. C. Roasting/baking/production of all starches, sides, vegetables to accompany COP items D. Fundamentals of gravy and sauce making 6. Secondary Food or Swing Production A. Preparation of Soups in varying consistencies (broth, cream, pureed, emulsion, cold, etc.) using standardized recipes B. Performance of such other duties normally performed in support of primary production operations (bakery, desserts, pastry, catering, etc.) C. Assist in preparation of catered events per direction of Management D. Substituting in various stations of the kitchen as needed 7. Menu Making A. Balanced menu making and percentage, considering ethnicity, diversity and inclusion B. Recipe building, scaling, and costing. C. Buffet setup; identifying customer flow and optimizing customer experience D. Table scaping E. Plating and garnishing 8. Local Operational Work Processes TOTAL HOURS of Apprenticeship work 4160 The above schedule is to include all operations and such other work as is customary in the trade. ***** OTHER EXPERIENCE AND QUALIFICATIONS: TERM OF APPRENTICESHIP: The term of apprenticeship shall be Time-based, which has been established to be 24 months or 4160 hours. Hours of labor shall be the same as established for other skilled employees in the trade. PROBATIONARY PERIOD: The probationary period shall be the first 6 months of the apprenticeship, but in no case shall it exceed twelve calendar months. During the probationary period, this contract may be cancelled by the apprentice or the sponsor upon written notice to the Department, without adverse impact on the sponsor. SCHOOL ATTENDANCE: The apprentice shall attend the Wisconsin Technical College System or other approved training provider, as assigned, for paid related instruction four hours per week or the equivalent and satisfactorily complete the prescribed course material for a minimum of 416 hours, unless otherwise approved by the Department. The employer must pay the apprentice for attended related instruction hours at the same rate per hour as for services performed. WORK PROCESS SCHEDULE: In order to obtain well-rounded training and thereby qualify as a skilled worker in the trade, the apprentice shall have experience and training in the following areas. This instruction and experience shall include the following operations but not necessarily in the sequence given.
