Job Summary:

AIP is looking for a Cook to join them in Los Fresnos, TX. To join our team of outstanding professionals, apply today!

Job Responsibilities:

  • As directed, independently performs moderately difficult tasks in preparing quantities of quickly prepared foods such as steaks, chops, cutlets, hamburgers, eggs, salads, and other similar items.

  • Works under the supervision of the Cook II. The Cook I will act independently or assist in the performance of all duties necessary to keep the food services in full operation. Will perform other duties as assigned.

  • The Cook I position works in a large industrial detention center kitchen performing or assisting with the below duties under supervision. The duties listed below are not set forth for purposes of limiting the assignment of work. They should not be construed as a complete list of the various duties normally performed by the individuals assigned to the Food Service department or those to be performed temporarily outside an employee’s normal line of work.

  • Prepares in quantities, by various methods of cooking a variety of foods including soups, sauces, meats, fish, vegetables, baked goods, etc.

  • Prepares special foods for non-citizens requiring special diets.

  • Plans cooking schedule so food is ready at prescribed times.

  • Ensures delivery of food to pod at prescribed times.

  • Provides the measuring, mixing, stirring, cutting, grinding, chopping, and seasoning of ingredients according to recipes.

  • Test foods for completion of cooking time and adjust heat controls.

  • Monitors the baking, roasting, broiling, frying, and steaming of foods as called for in recipes.

  • Monitors the carving and dividing of portions into individual servings.

  • Assists in the training of non-citizen volunteers.

  • Monitors daily operations in food productions for conformance to establish quality, quantity, safety, and sanitation requirements.

  • Reviews menus to determine type and quantity of food to be prepared.

  • Draws required cooking utensils from kitchen storage areas.

  • Loads and unloads delivery trucks as necessary.

  • Delivers food to housing units (may include loading carts onto trucks, driving trucks, unloading carts, serving trays to non-citizens

  • Work is completed in a priority established by supervision or facility need.

  • All work will be completed with a high degree of professionalism, quality and craftsmanship.

  • Lulls in workload are used to maintain a clean and orderly work area and to ensure clerical tasks are up to date.

  • Keeps up to date on departmental and facility safety standards and local codes and policies.

Qualifications

Minimum Qualifications:

  • A high school diploma or GED is required.

  • Minimum one-year experience in large scale cooking in a commercial or industrial kitchen.

  • Able to obtain a State of Texas Food Handlers Permit.

  • Ability to become First Aid, CPR and AED certified with initial training.

  • US citizen or a person lawfully admitted into the United States for permanent residence and have resided in the U.S. for at least the last five years.

  • Possess a high school diploma or equivalent (GED).

  • Pass a criminal background and consumer credit check (no criminal record).

  • Obtain and maintain a DHS/ICE government clearance.

  • Pass all pre-employment and random drug tests.

  • Pass a medical examination and meet health requirements.

  • At least 18 years of age.

  • Possess current/valid Texas food handlers permit.

  • Knowledge of day-to-day operation of an industrial kitchen.

  • Capability of following and understanding written and verbal orders, policies and regulations.

  • Incumbent shall be literate and able to interpret printed rules and regulations, recipes, and detailed instructions.

  • Incumbent must exercise good judgment, alertness, an even temperament, and render satisfactory performance through his/her responsibilities.

  • Ability to maintain poise and self control during situations that involve mental stress, such as fires, explosions, disturbances and building evacuations.

  • Maintain a professional personal appearance and calm demeanor.

  • Possess a high degree of integrity, accountability and ability to adhere to the American Correctional Association and DHS ICE standards.

  • Demonstrate an ability to work with a diverse population of people, including people of different cultures, with different values and lifestyles; with a cross cultural perspective.

  • Maintain current/physical residence in the continental United States.

Knowledge, Skills and Abilities:

  • Must speak, read, and write fluent English.

  • Possess ability to read and follow instructions and recipes in English.

  • Possesses dexterity and use of motor skills to execute required kitchen tasks.

  • Ability to work with a diverse population, speaking numerous languages with and from different cultures and from various countries around the world.
