SOUS CHEF - Restaurant Excellence Team

This leader will assist in the oversight and management of new and existing Mina Group Kitchens. Responsible for teaching and training staff on recipe philosophy and technique for all new and existing entities. This position will coordinate the planning, organization, training and leadership for new entities and ensure that all properties achieve stated objectives in sales, costs, employee retention, communication and awareness, guest service and satisfaction, food quality, and sanitation.

OPENING RESPONSIBILITIES:

  • On-site at all openings for 30-60 days training line and Kitchen management staff

  • Participates, on site, in training and implementation of recipes, techniques and concept

  • Organizes kitchen and storage spaces for pre-open and ongoing

  • Assists with ordering and product sourcing for restaurant openings

  • Trains Kitchen management staff on Mina Group practices and procedures

  • Implements costing, scheduling and labor tracking procedures

  • Assists property chef in costing, recipe writing, and videotaping of new dishes in order to facilitate their being posted to the RecipeXchange website

OPERATING RESPONSIBILITIES:

  • When not travelling, spend at least five days a week in San Francisco, Las Vegas, or home restaurant assisting chefs, expediting service and training cooks (as directed by Corporate Chef).

  • Assists in standardizing recipes throughout company

  • Assists in standardizing techniques throughout company

  • Plans and coordinates special events as directed.

  • Reviews and approves special event and promotional menus as posted to RecipeXchange in conjunction with Corporate Chef.

  • Provides fill-in and task force coverage at all restaurants as needed.

  • Helps enforce adherence to Mina Group SOPs at restaurant outlets.

  • Finds and implements purchasing efficiencies for the region.

  • Reviews weekly restaurant schedules, and on a case-by-case basis, other restaurants as assigned by Corporate Chef.

  • Reviews and approves special event and promotional menus as posted to RecipeXchange in conjunction with Corporate Chef.

  • Reviews property chef's choice of products and vendors to ensure that the best products at the right price are being used throughout the company.

QUALIFICATIONS:

  • 3-4 years of Lead Cook/Lead Hot-Line Station Cook experience at a fine dining, farm-to-table restaurant

  • Willingness to travel to various Mina Group Locations around the United States

  • Passion for food

  • Excellent communication and organization skills. Ability to interact professionally and diplomatically with a variety of business partners, guests, colleagues, direct reports

Travel:

There will be extensive travel required to perform the essential job functions. Travel

requirements will be to the discretion of Mina Group. This includes travel to certain

restaurants for extended periods of time, to assist with manager coverage during transitions

as well as during restaurant openings.

Timeframe and Initiative: The Restaurant Excellence Team (REX) provides leadership candidates the opportunity to be fully trained in MINA Group standard operating procedures, systems, and concepts through assignments at multiple locations with the goal of taking a leadership position at a MINA Group restaurant in a full-time capacity. While individual development and management vacancies may affect timing, our expectation is that REX members will assume a full-time position at any one of our outlets within 12-18 months from their hire date.

 

Salary for this role is $65,000-70,000
