Island Senior Resources Food Service Manager in Langley, Washington

POSITION SUMMARY

Responsible for the planning, purchasing, preparations, and daily distribution of 300-400 (plus special occasion meals up to 500 meals) hot meals utilized by the Island Senior Resources Meals on Wheels and Community Meal Program for Whidbey Island. Supervises the Bayview kitchen staff. Responsible for management/production of catering events and catering projects to supplement nutrition program as needed.

ESSENTIAL JOB FUNCTIONS

Manages the operations of the Bayview kitchen, ensuring quality, portion control, food safety, sanitation, health codes and fire codes are maintained daily.

Supervise and direct all Bayview kitchen food production, working with Nutrition Director so that standards of the Nutrition Program are met daily, and the approved menus are followed. Responsible for all food items that need advance preparation for the next meal service day, allowing for proper thawing methods of frozen products. Responsible for daily task schedules of all Bayview kitchen staff; oversees task delegation and schedules staff to maintain efficient and smooth Bayview kitchen operations.

Direct supervision, training, scheduling and regular check-ins for the Bayview kitchen staff. Nutrition Director continues to review and approve timesheets.

Estimate food requirements, control serving portions, eliminate waste and leftovers in accordance with yield specifications.

As Lead Cook, responsible for the daily meal preparation of menu entrée and side dishes. Prepares and cooks a wide variety of foods indicated on the approved menus, utilizing commercial cooking equipment and following the program's standardized recipes and food safety practices. Places food / consumable orders in association with the menu.

Schedule food production so that prepared food and supplies leave the kitchen within a time schedule that allows prompt delivery to the satellite nutrition sites, maintaining temperature and quality control standards.

Maintain communication with Whidbey satellite sites regarding menu changes, serving instructions, portioning, and weekly meal ordering.

Responsible for inventory control of food and non-food supplies. Maintains food storage order in dry pantries, refrigeration, and freezer storage areas.

Works with Nutrition Director to evaluate recipe costing.

Maintain regular contact and communication with Nutrition Director. Purchasing, menu, and program decisions are made under the supervision and guidance of the Nutrition Director. Meets weekly with the Nutrition Director to discuss personnel, new recipes, menu, food production and any other topics related to the job assignments for the next week.

Responsible for purchasing of supplies for Meals on Wheels and Community Meals on Whidbey. Responsible for diversifying purchasing and maintaining multiple vendor relationships for central purchasing. Responsible for Whidbey kitchen and satellite site equipment repairs and maintenance. Responsible for troubleshooting problems and notifying maintenance for Bayview kitchen and satellite sites repairs.

Assist the Nutrition Director with annual evaluations of Bayview kitchen staff. Maintain a working relationship with all Satellite Meal Site Managers. Provide training and assistance at monthly staff meetings and on site as needed.

Assist the Nutrition Director with monitoring operations of Satellite Meal Sites to ensure requirements for portioning, serving, and food safety are maintained.

Establish and maintain positive relationships with Bayview kitchen staff, meal site staff, volunteers, ISR staff, and facilities staff personnel, and participants.

Maintain standards for proper handling and temperature-controlled foods: keeping hot foods within food safety regulations and cold foods within food safety regulations during transport.
