Opportunity
Responsible for the development of Kohler Original Recipe Chocolate product development, production, quality control and packaging. Supervise the daily planning and preparations necessary to meet production needs. Ensure KORC products and quality remain competitive and a leader in the premium chocolate product retail market with focus on the end customer.
Manage food and labor cost and drive new product development. Responsible for development and oversight of production staff, new product development, production processes and growth, FDA regulation compliance, equipment sourcing, inventory control, and contributing in decisions affecting the P&L for KORC.
Specific Responsibilities
Planning/Production/New Product Development
Lead in the planning process of new products.
Keep current with trends in Chocolate industry.
All new menu items must be costed out to achieve planned food cost goals.
Responsible for maintaining efficient production schedule and goals.
Responsible for the maintenance schedule of all production equipment.
Plan for future production growth needs through equipment and product research.
Personnel
Creates an environment which allows associates to exceed customer expectations.
Serves as a role model for proper processes execution and continuous operational improvement.
Sets high standards for all associates through conducting monthly all- department meetings to effectively communicate information that affects our business.
Will conduct all hourly associate reviews in a fair and timely manner.
In absence of KORC General Manager, assist Controller in determining staffing levels, attraction, and selection of associates.
Lead the coaching and development of associates in preparation for expansion opportunities in the future.
Standards and Procedures
Ensure that all Standard Operating Procedures are current, including but not limited to:
Recipe manuals
Batch Formulation Sheets
Standard Production Sheets
All KORC Production Job Descriptions
Ensure quality and consistency standards are met throughout manufacturing process
Cost Control
Bid every food product for best price and quality, managing freight expense and inventory timing.
Network with other resort chefs for Best Practices, cross-use of products, and reduction of waste.
Achieve budgeted food and labor costs monthly and annual plan.
Lead month-end inventory.
Build relationships with vendors and initiate purchasing agreements with Purchasing Department to reduce food cost.
Professional Relations
Initiate and maintain vendor relations to stay current with industry trends and Best Practices.
Brand Ambassador and professional representative for KORC to all audiences
Attend monthly KORC strategy meetings.
Resident expert on all matters relating to chocolate and chocolate production.
Quality Control
Establish high standards and uphold quality within the KORC department.
Develop and train KORC production associates on proper handling and appearance of chocolates.
Stay current with chocolate methodology and drive continuous improvement.
Innovate products that exceed customer expectations.
Partner with sales team to ensure high-quality training standards are being used for new and existing customers aligned with KORC Brand expectations.
Skills/Requirements
5+ years of practical experience in leadership role in production kitchen management.
Culinary degree or equivalent apprenticeship program completed in Chocolate/Confectionary Arts.
Master Chocolatier designation is preferred.
Ability to understand and positively affect P&L statements.
Involved in continuing education in the Chocolate/Confectionary Arts.
Applicants must be authorized to work in the US without requiring sponsorship now or in the future.
The salary range for this position is $80,050 - $100,050. The specific salary offered to a candidate may be influenced by a variety of factors including the candidate’s experience, their education, and the work location. Available benefits include medical, dental, vision & 401k.
