Job Description Summary

The Director of Outlet Operations will manage the day-to-day operation of all food and beverage outlets. The Director is responsible for the leadership and management of all aspects of the Food and Beverage Outlets in accordance with company policy, procedures, and standards. The director directs, implements, and maintains a service and management philosophy that serves as a guide to respective staff to ensure 100% guest satisfaction.

Job Description

Special Qualifications, Education, or Licenses:

  • Experience, skills, and certification
  • 5- 10 years of experience in a similar position
  • Manager's Safe Serve permit required
  • TABC required

Essential Elements:

  • Exert physical effort in transporting up to 50 pounds to and from the work area.
  • Detail oriented, energetic, resourceful
  • Strong communicator with guests, associates, and the management team
  • Ability to multi-task

Job Tasks

  • Supervise day-to-day operation of all food and beverage outlets
  • Implement and maintain all Sonesta service brand standards
  • Work closely with the Executive Chef and the Director of Operations to ensure all menus and offerings remain relevant
  • Create innovative programs and promotions to market special menu items, increase guest patronage, and boost sales
  • Work closely with the hotel's Marketing Team to promote outlets on various social communication platforms
  • Monitor the performance of the outlets through analysis of feedback and financial results and create corrective actions as needed
  • Keep a detailed log of the Outlets' daily activity
  • Assist in preparing a monthly forecast
  • Assist in preparing yearly Food and Beverage budget
  • Achieve budgeted revenues and control expenses accordingly
  • Maintain all safety standards to ensure a safe work environment for all
  • Ensure that all outlet facilities are well maintained and clean, and resolve or report all deficiencies to the appropriate departments
  • Ensure pre-shift lineups are performed regularly for every associate in the FB Outlets
  • Perform monthly associate meetings for all outlets individually or combined and keep detailed notes
  • Perform regular one-on-one meetings with all outlet associates
  • Promote teamwork and quality of execution by communication and collaboration with other relevant departments such as Sales and Marketing, Banquets, Culinary, Guest Services, Housekeeping, and Engineering among others
  • Work closely with Human Resources to identify new team members and provide appropriate training and tools
  • Perform progressive disciplinary action if/when needed
