Housing & Dining Services
Housing & Dining Services ( HDS ) is the largest department on campus with 450 full-time staff and 1,700 hourly and student staff, and nearly 8,300 students live on campus. HDS is responsible for the management, finance, administration, and program development of all University housing facilities, including residence halls, university apartments, and Mountain Campus. As a department, HDS works to create dynamic housing and dining experiences that enhance personal growth and global engagement. We do this through implementation of our values of customer first service, commitment to students and staff, integrity, respect and teamwork, inclusiveness and diversity, innovation and stewardship. MOUNTAIN CAMPUS
As part of HDS , the Mountain Campus ( MTC ) serves the University and surrounding communities as a site for student learning, research and conferences. We strive to deliver outstanding residential and dining experiences crafted by an engaged team dedicated to social and environmental responsibility. The MTC operates a single dining center located approximately 50 miles from Fort Collins at 9,000 ft. elevation in a remote mountain valley adjacent to Rocky Mountain National Park. Our season of operation is May to November. We employ 30-35 seasonal staff and serve 65,000+ meals each season to the nearly 6,500 students, faculty, staff, and visitors to the campus. There is limited Wi-Fi, but no cell phone service, and pets are not allowed.

Position Summary
This Lead Cook position will act as an assistant manager, work leader over employees, and a fully operational cook preparing/producing food from an established preprinted menu and standardized recipes. They will be responsible for the quality, quantity, and appearance of food prepared, as well as training, coaching, mentoring, HACCP compliance, and scheduling. They will assist in ordering, inventory, menu management, and its interfaces with Grub Hub Nutrislice, and Cbord NetMenu.
During the offseason (November – March), this position will report to Residential Dining Services on the Colorado State University, Fort Collins campus.
Required Job Qualifications
- Three years of dining services experience appropriate to the job assignment.
Preferred Job Qualifications
The ideal candidate will possess the following skills (e.g., knowledge, skills, abilities, and other personal characteristics) which have been outlined as essential to performing successfully in this position.
Two years’ experience working in a remote culinary environment (e.g., ski resort, Mtn Campus, ranch).
Work experience in a high-volume (300+ meals) food production operation and food safety certification such as ServSafe or HACCP .
Strong leadership skills demonstrated through a positive attitude, proactive approach to work, ability to mentor and train others, and delegate tasks by identifying other strengths.
Demonstrated ability to handle multiple activities/tasks with competing priorities.
Demonstrated interpersonal and verbal communication skills necessary for building and maintaining successful work relationships.

Provides input on the operation and produces meals from preprinted menus using standardized recipes and methods to maintain high quality, nutritional standards, and safety & sanitation regulations.
Food items are produced by the ability to bake, roast, broil, steam, fry, grill, chop, measure, and mix ingredients, etc. by hand or using power operated equipment.
Monitor and restock service areas by assuring food product quality and availability, prepare/procure and produce food items for further use.
Record/verify temperature control checks ( HACCP ).
Train hourly and other career staff on unit processes.
