Job Purpose:
Under the direction of the designated venue Chef/Sous Chefs, the Prep Cook assists in prepping and cooking the ingredients for all F&B operations which includes the Red Tail Grill & Bar, On Course services, and Banquets at Singing Hills Golf Club under the Food & Beverage/Culinary Management; maintains all food, equipment and kitchens to set health codes and casino/club standards; maintains positive, team oriented and accommodating attitude toward guests (internal as well as external), fellow team members and management, at all times.
Job Duties and Responsibilities:
(Note: Duties and responsibilities may be added, deleted, or changed at the sole discretion of Sycuan Management at any time)
Completing all tasks, in order, on the prep list from the head chef/sous chefs and/or other kitchen management
Provides kitchen with all food products including and not limited to sauces, par cooking food, chopping, washing, seasoning, plating/boxing and maintains a safe and sanitary cooking area.
Labeling and stocking all ingredients.
Maintains clean and orderly walk in and storage areas.
Maintains a safe and sanitary kitchen
Performs other duties as assigned to support the efficient operation of the department.
Job Specifications:
Education and Experience:
Essential:
County of San Diego SERVSafe Food Handler Card
Cooking experience in a high-volume commercial kitchen
Desirable:
High School Diploma or G.E.D.
Culinary degree
Skills and Knowledge:
Essential:
Working knowledge of cooking temperature guidelines
Ability to safely operate cutting tools, blenders, grinders, slicers.
Ability to prepare menu items from recipes
Ability to perform mathematical equations
Ability to lift up to 50 lbs.
Ability to stand for up to eight hours at a time
Ability to bend and stoop
Ability to maintain professionalism and composure
Ability to interact effectively with guests and team members
Ability to communicate effectively in the English language
Ability to understand and follow verbal directives and written directions
Ability to accept constructive criticism
Ability to appear for work on time
