East Bank Club Executive Sous Chef in Chicago, Illinois
East Bank Club, the most gracious and dynamic fitness, sports, and dining facility in Chicago, is seeking an Executive Sous Chef to join our innovative and passionate culinary team. As the Executive Sous Chef, you will be responsible for assisting the Executive Chef in overseeing the day-to-day operations of our culinary department. You will play a key role in maintaining the highest standard of culinary excellence, leading and mentoring a team of talented chefs, and creating exceptional dining experiences for our members and guests.
Oversee and supervise kitchen in all phases of food storage, production, purchasing, requisitioning and sanitation. Ensure that all areas of the kitchen are ready for projected daily business. Expectations includes driving each shift to maximize production. Handing personnel questions as they occur. Be part of a team that wants to create a dining experience that is on par with the club’s culture. Must be willing to take on other areas as a team player at all times. Must take ownership of kitchen and duties while the Executive Chef is out. Train and manage all sous chefs. Be open minded to different approaches and feedback. Inspire our community to live well.
ESSENTIAL FUNCTIONS
Assist in managing and supervising all culinary operations
Provide guidance and support to the culinary team, ensuring consistency and excellence in food quality, presentation, and service
Ensure proper DOH protocols for hot holding, cold holding and labelling
Maintain inventory control, food cost management, and waste reduction strategies
Ensure all Walk-ins are cleaned and organized at the end of every shift.
Supervise line production at necessary times (expedite service)
Collaborate with front of house manager to ensure best possible service for the members
Collaborate with other departments to ensure seamless coordination and execution of events and special functions
Ensure all areas are ready for service
Supervise all salary and hourly staff daily. Focus on specific outlet assigned for any given day.
Assist with hiring, scheduling, disciplinary action, labor management/payroll and performance evaluations of culinary staff
Lead and Inspire daily.

Requirements
5+ years of Executive Sous Chef experience in restaurant, hotel or country club settings.
Maintain proper food certifications specific to Chicago Laws
Ability to lead with a desire to educate and empower team members
Must have multi-unit operation experience
Proven experience as a sous chef or in a similar leadership role in a high-volume, fine dining establishment
Strong culinary skills and knowledge of diverse cooking techniques and cuisines
Exceptional leadership and organizational abilities
Excellent communication and interpersonal skills
Knowledge of food safety and sanitation regulations
Ability to work in a fast-paced, high-pressure environment
Passion for culinary excellence and commitment to delivering an exceptional dining experience
Ability to work a flexible schedule, including weekends and holidays
Experience with inventory management and cost control
Proven ability to handle multiple priorities and meet deadlines
Positive attitude, strong work ethic, and a team-oriented mindset
Huge understanding that there is no line between front and back of house. We are all working for the same result. To take care of our members on a daily basis.
