Job Description

What you will be doing:
Lead the Stewarding team in many functions of food service, cleaning and organization in the F&B restaurants and kitchens, loading dock area and storage spaces
Lead the stewarding team in coordinating and maintaining the cleanliness of all F&B areas in the hotel including china, silverware, glassware, cookware, banquets equipment and cleaning equipment.
Lead the stewarding team in delivery of equipment for setup and breakdown of banquet and restaurant functions, while continuing clear communication between the Stewarding team and the Culinary and Restaurant Management teams.
Receiving and storage of products both food and dry goods within the kitchens
Consistently offering professional, friendly and proactive guest service while supporting fellow colleagues
Lead and supervise the Stewarding team in all aspects of the department and ensure standards are followed
Supervise and maintain the sanitation of kitchen equipment and other areas assigned
Train all Kitchen Stewards
Review banquet event orders and ensure all set-ups and supplies are in place from banquet requisitions
Check equipment daily to ensure all is in working condition and promptly report any defects or malfunctions to the Stewarding Management team
Ensure all hand sinks are always stocked with soap, sanitizer and paper towel and are kept clean
Ensure all equipment in stocked with proper chemical
Operate an industrial dish machine
Operate and maintain industrial trash compactors
Ensure all Colleagues have the dishes, silverware and glasses required
Sort, stack dishes, and load/unload dish machine
Sort, stack and store all cleaned items in an organized and safe manner
Ensure all broken and chipped items are removed from circulation, reported and inventoried
Ensure floors are dry and clean at all times
Ensure all equipment is in working order and report any items in need of repair
Remove debris and trash to designated areas throughout shift
Clean and sanitize all pots, pans, and dishes by hand and using dish machines
Follow department policies, procedures and service standards
Maintain a clean and safe work environment, including all equipment and storage spaces
Other duties as assigned
Qualifications
Previous experience as a Steward at a high volume establishment is preferred.
Candidate must have knowledge of chemicals, personal protection equipment, and sanitation guidelines.
Requires the ability to work efficiently and within a team environment.
Knowledge of chemicals, MSD sheets, and health code regulations.
Must have the ability to multi-task and work in a fast paced and stressful environment with prolonged walking/standing.
